What to Expect on the Water

We typically meet at 7:00 a.m., but here's the thing – we get that not everyone's an early bird, and some folks prefer afternoon trips. Just give us a shout and we'll work around your schedule. The beauty of our 6-hour window is you get the best of both worlds: enough time to really get into the groove without feeling rushed, plus the flexibility to choose morning or afternoon departure times. Bottom Fishing Techniques

We're talking serious bottom fishing here – the kind that gets your heart pumping when you feel that telltale thump on the other end of your line. We'll be using heavy tackle and circle hooks to handle the bruisers that call these deeper structures home. The technique is straightforward but effective: we'll anchor up over prime bottom structure, drop down fresh bait, and let the fish tell us what they want. Depending on what's biting, we might switch between live bait and cut bait throughout the trip. The key is staying patient and keeping your bait fresh – these offshore species are smart and they know the difference between a meal and something that's been sitting on the bottom too long. Top Catches This Season

Red Snapper are the crown jewel of Gulf fishing, and for good reason. These beautiful fish with their bright red coloration and solid build are absolute fighters – they'll test your arms and your patience. Red Snapper season typically runs from June through July, and when it's open, these fish are incredibly aggressive. They hang around structure in 60-100 feet of water and aren't shy about hitting a well-presented bait. What makes them special is their incredible table fare – there's a reason restaurants pay top dollar for fresh Red Snapper. The best part? They travel in schools, so when you find one, you've usually found several.

Gag Grouper are the workhorses of the bottom fishing world. These guys are ambush predators that love to hunker down in caves and crevices, waiting for an easy meal to swim by. They're available year-round but really turn on during the cooler months from October through March. Gags are notorious for their initial run – they'll try to get back to their hole the second they feel that hook, so you better be ready for a fight. They're also incredibly smart fish that will remember fishing pressure, which makes catching a nice Gag that much more satisfying. Plus, they're fantastic eating with firm, white meat that's perfect for grilling.

Scamp Grouper might be smaller than their Gag cousins, but don't let that fool you – these fish pack serious attitude. They're beautiful fish with distinctive markings and they love rocky bottom and ledges in 80-200 feet of water. Scamp are available year-round but tend to bite best during the spring and fall months when they're more active. What's cool about Scamp is they're curious fish – sometimes they'll come up and check out the boat, giving you multiple chances to get them to bite. They're also excellent table fare, with sweet, flaky meat that many anglers prefer over other grouper species.

Grey Triggerfish are the comedians of the offshore world – they're quirky looking with their big eyes and unique swimming style, but they're also one of the tastiest fish in the Gulf. These guys are structure lovers and they're incredibly intelligent, often requiring finesse tactics to fool them. They're available from August through May, with late summer and fall being prime time. Triggers have a unique way of biting – they'll actually grab your bait and try to swim away with it rather than just hitting it hard like other species. The payoff is worth it though, as their meat is sweet and firm, perfect for ceviche or grilling.

Greater Amberjack are the bulldogs of the deep – when you hook into a good one, you know it immediately. These fish are pure muscle and they'll take you on a ride you won't forget. AJ's are available year-round but really turn on during the spring and fall months when they're more aggressive. They love vertical structure and wrecks, often hanging in the mid-water column before dropping down to feed. What makes Amberjack special is their fighting ability – they'll make long, powerful runs that will test your tackle and your technique. They're also great eating when prepared properly, with firm meat that's perfect for smoking or making fish dip.

Gag Grouper

Gag grouper are serious bottom dwellers that'll give you a real workout. These guys average 20 inches but can push 50+ inches and 80 pounds - the big males are dark with reticulated fins. They love structure like wrecks, ledges, and rocky bottoms in 60-300 feet of water. Spring through fall are prime times when they're actively feeding. What makes them fun to target? They're ambush predators that hit hard and immediately try to get back to their hole, so it's a tug-of-war from the start. Plus, they're excellent eating. My advice: once you hook one, lock down that drag and keep steady pressure - don't let them freewheel or they'll dive straight into the rocks and cut you off. Live pinfish or cut bait works great.

Greater Amberjack

Greater amberjack are the bulldogs of the reef - pure muscle and determination. These fish average around 40 pounds but can push 100+ pounds and 6 feet long. They patrol wrecks, reefs, and structure in deeper water, usually 100+ feet down. Spring through early summer is prime time when they're most active around our offshore spots. What makes them special? They're incredibly strong fighters that make long, powerful runs and test your tackle to the limit. The bluish-grey bodies with that amber stripe are beautiful, and they provide great action on both heavy tackle and lighter gear for experienced anglers. My tip: when you hook one, be ready for a marathon fight. Use live bait like blue runners or cigar minnows, and don't pump and wind - just keep steady pressure and let your drag do the work.

Greater Amberjack

Grey Triggerfish

Grey triggerfish are one of the most entertaining fish to catch - they've got personality and attitude. These guys average around 17 inches but can hit 2 feet and 13 pounds. You'll find them around reefs, ledges, and structure in 50-180 feet, where they use their sharp teeth to crunch up crabs, urchins, and whatever else they can fit in their small mouths. Summer months are best when they're most active. What makes them fun? They're aggressive, competitive feeders that will steal bait from other fish, and they fight surprisingly hard for their size. The meat is excellent too - firm and tasty. Here's a local trick: drop squid chunks near other fish like snappers, and the triggers will rush in to steal the bait. Keep your line tight and set the hook fast when you feel that first nibble.

Scamp grouper are the prize of the grouper family - many say they're the best tasting fish we catch. They're smaller than their cousins, averaging 4-6 pounds and under 3 feet, but don't let that fool you - they're incredibly strong fighters. Look for them around structure in 75-300 feet, though they'll move shallower during spawning season (February through May). What sets them apart is that chocolate brown color with darker blotches and those long tail fin rays. They're ambush predators hiding under ledges and around wrecks. The fight is what gets people hooked - they're slow but powerful, making long runs. For the best shot at landing one, use live pinfish or sardines on a strong setup with braided line. Don't give them any slack or they'll wrap you up.
